My personal favourite is the excel 97 flight simulator. To get it:
1. Open a new workbook
2. Press F5
3. Type in the expression following the hypen exactly, and with no spaces - X97:L97
4. Press Enter
5. Press Tab
6. Press the Ctrl and Shift buttons simultaneously and then click the Chart Wizard button on the toolbar while holding down the buttons.
This apparently works with excel 2000 as well, except that it launches a car game instead (and you have to type X2000:L2000). I can't test it as I've never had office 2000.
unfortunately any microsoft product from Windows XP onwards has no easter eggs because of a court ruling saying that MS is not allowed to have any undocumented features in their applications. There is however an easter egg-like feature in Word-XP:
Open a blank Word document, Type '=rand(n1,n2)' (without the quotes) and press Enter.
where n1 and n2 are numbers. This prints n1 paragraphs containing n2 sentances of "the quick brown fox jumps over the lazy dog"

It's (sorta) visible to the naked eye in Firefox - anyway, it owns IE for a whole bunch of better reasons than seeing gimmick pictures. Cleverly done though!
